Ingredients

- 4 eggs
- 2 tablespoons butter
- 3-4 tablespoons all-purpose flour
- 75-100 g cooked nettles
- About 1 tablespoon salt
- A pinch of sugar
- 1-1.5 liters milk

Instructions

1. Melt the butter in a pot over low heat.
2. Add the flour to the melted butter and mix well. Cook this mixture for a few minutes until it turns a light golden brown.
3. Gradually pour in the milk while stirring to avoid lumps. Heat the mixture over medium heat.
4. Add the cooked nettles, salt, and a pinch of sugar. Let the soup simmer on low heat for about 10-15 minutes.
5. Crack the eggs into a separate bowl and whisk lightly. Add the eggs to the soup and stir gently.
6. Allow the soup to bubble for a few more minutes until the eggs are cooked.
7. Serve hot, ideally with some bread.
