A delicious and nutritious soup that takes advantage of fresh young nettles, perfect for springtime. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1.5 liters (about 250 g) fresh young nettles
- 2 tablespoons butter or margarine
- 3 tablespoons all-purpose flour
- 1.25 liters beef broth
- Salt and pepper to taste
- (optional) Cream for serving
Instructions:
1. Rinse the nettles thoroughly and remove the thick stems.
2. Melt the butter or margarine in a pot over medium heat.
3. Add the flour to the butter and mix well. Cook the mixture for a few minutes until it is lightly golden.
4. Gradually add the beef broth while stirring continuously to avoid lumps.
5. Bring the broth to a boil and add the nettles. Cook for about 10-15 minutes until the nettles are tender.
6. Blend the soup with an immersion blender or in a regular blender until smooth.
7. Season with salt and pepper to taste.
8. Serve hot, drizzling a bit of cream into each bowl if desired.
