A delicious blueberry tart that combines sweet meringue with juicy blueberries, bringing out the best flavors of summer. Serve the tart slightly warm with vanilla ice cream.

Ingredients:
- 200 g crushed digestive biscuits
- 100 g melted butter
- 300 g fresh blueberries
- 3 eggs (separated)
- 150 g sugar
- 1 tsp vanilla sugar
- 1 tbsp cornstarch
- Juice of 1 lemon
- A pinch of salt
Instructions:
1. Preheat the oven to 180°C (350°F).
2. Mix the crushed biscuit base with the melted butter. Press the mixture evenly into the bottom and sides of a tart pan.
3. Bake the base in the oven for about 10 minutes, until golden brown. Remove from the oven and let cool.
4. In a bowl, combine blueberries, egg yolks, sugar, vanilla sugar, cornstarch, and lemon juice. Pour the mixture over the pre-baked base.
5. In another bowl, whisk egg whites with a pinch of salt until stiff peaks form. Gradually add sugar while continuing to whisk until the mixture is glossy and firm.
6. Spread the meringue mixture evenly over the blueberry mixture.
7. Bake the tart in the oven for another 15-20 minutes, until the meringue is beautifully golden brown.
8. Allow the tart to cool slightly before serving. Serve warm with vanilla ice cream.
