Ingredients

Dough Liquid:
- 2 cups + 6 tablespoons warm water (40°C)
- 1 packet (11 g) dry yeast
- 1 teaspoon honey
Flour Mixture:
- 1 1/4 cups psyllium husk
- 2 tablespoons chia seeds*
- 20 g rice protein powder*
- 2 teaspoons xanthan gum
- 2 teaspoons high-quality salt
- 2 cups whole grain rice flour (285 g)
For the Dark Dough:
- 140 g cooked black beans (mashed)
- 1 tablespoon mild oil (e.g., sesame oil)
- 1 tablespoon black molasses
For the Green Dough:
- 1 tablespoon mild oil (e.g., sesame oil)
- 1 tablespoon honey or agave syrup
- 1 tablespoon matcha powder
*Note: These ingredients act as egg substitutes. If using eggs, add 2 eggs, and the chia seeds, protein powder, and additional liquid are not necessary.

Instructions

1. Prepare Dough Liquid: Mix all the liquid ingredients and wait until the yeast starts to foam on the surface.
2. Make Flour Mixture: In a large bowl, combine all the flour mixture ingredients. Divide the mixture into two bowls.
3. Prepare Dark Dough: In the dark bowl, add half of the dough liquid and mix. Incorporate the black beans, oil, and molasses, and knead the dough by hand. Cover and let it rise in a warm place for about 20 minutes.
4. Prepare Green Dough: Repeat the same steps for the green dough, adding the green dough ingredients. Let this dough rise for another 20 minutes.
5. Shape the Doughs: Roll the dark dough into a rectangle about the size of half a baking sheet and transfer it to parchment paper. Roll the green dough slightly smaller and place it on top of the dark dough.
6. Roll the Dough: Roll the doughs together into a log shape and form it evenly. Transfer the roll to a cold oven.
7. Bake the Bread: Preheat the oven to 180-200°C and start it. Bake the bread for about an hour or until it feels light and has a nice color.
8. Cool Down: Allow the bread to cool completely before slicing.
