Serving Size: 4 people
Ingredients:
- 2 large eggplants
- 2 tomatoes
- 200 g feta cheese
- 1 dl fresh basil
- 1 dl olive oil
- 2 garlic cloves
- Salt and pepper to taste
- 100 g mozzarella cheese
Instructions:
1. Slice the eggplants into 1 cm thick rounds. Sprinkle salt on the slices and let them sit for about 15 minutes. Rinse off the salt and dry the slices.
2. Preheat a grill or frying pan and cook the eggplant slices on both sides until they are soft and have a nice color.
3. Slice the tomatoes and crumble the feta cheese.
4. Build the tower: place one eggplant slice on a plate, add slices of tomato, feta cheese, and basil on top. Repeat the layers until all ingredients are used.
5. Sprinkle chopped garlic and mozzarella on top.
6. Finally, drizzle with olive oil and season with salt and pepper to taste.
7. Serve immediately while warm or allow to cool and enjoy at room temperature.
