Autumn Pumpkin Soup

A delicious and creamy dish that warms the heart and body on chilly autumn evenings. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 500 g pumpkin, cubed
- 1 onion, chopped
- 2 garlic cloves, crushed
- 4 dl vegetable broth
- 1 dl cream
- 2 tbsp oil
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions:
1. Heat the oil in a pot over medium heat. Add the chopped onion and crushed garlic, sautéing until soft.
2. Add the pumpkin cubes to the pot and cook for a few more minutes.
3. Pour in the vegetable broth and simmer for about 15-20 minutes, until the pumpkin is soft.
4. Blend the soup until smooth using an immersion blender or a regular blender.
5. Stir in the cream and season with salt and pepper. Heat the soup again, but do not boil.
6. Serve the hot soup garnished with fresh thyme.
