Ingredients:

- 4 thinly pounded pork loin cutlets
- 2 cups all-purpose flour
- 2 teaspoons salt
- Zest of half a lemon
- ½ teaspoon paprika
- 2 eggs
- A splash of water
- 2 cups grated dry rustic bread
- 2 cups grated Parmesan cheese
- 6 sage leaves, thinly sliced

Instructions:

1. Prepare the cutlets by placing them pounded flat on a clean surface.
2. In a bowl, mix together the flour, salt, lemon zest, and paprika.
3. In a separate bowl, crack the eggs, add a splash of water, and whisk lightly.
4. In another bowl, combine the grated rustic bread and Parmesan cheese.
5. Take one cutlet and first dip it into the seasoned flour, ensuring it is fully coated.
6. Next, dip the cutlet into the egg mixture, then into the bread-Parmesan mixture, pressing it to adhere well.
7. Heat a frying pan over medium heat and add a little oil.
8. Fry the cutlets in the pan for about 4-5 minutes on each side, until golden brown and cooked through.
9. Remove the fried cutlets and place them on paper towels to drain excess oil.
