Delicious and moist apple muffins, perfect for utilizing the fall apple harvest. Easy to make and delightful as a snack or with coffee.
Preparation Time: 30 minutes
Serving Size: 12 muffins

Ingredients:

- 3 medium apples, peeled and diced
- 1 cup sugar
- 1/2 cup oil
- 2 eggs
- 1 tsp vanilla sugar
- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt

Instructions:

1. Preheat the oven to 350°F (180°C). Grease a muffin tin or use paper liners.
2. In a bowl, mix together the sugar, oil, eggs, and vanilla sugar. Whisk until smooth.
3. Fold in the diced apples.
4. In a separate bowl, combine the flour, baking powder, cinnamon, and salt. Mix well.
5. Add the dry mixture to the wet mixture and stir quickly. Do not overmix.
6. Divide the batter into the muffin cups, filling each about 2/3 full.
7. Bake in the middle of the oven for about 20-25 minutes, until the tops are golden brown and the muffins have risen.
8. Allow to cool slightly before serving.
