This hearty reindeer roast cooks in the oven for 2-3 hours and pairs perfectly with lingonberries, mashed potatoes, and root vegetables. Preparation Time: 2–3 hours
Serving Size: 4–6 people
Ingredients:
- 1.5 kg reindeer roast - 2 tbsp salt
- 1 tbsp black pepper
- 2 tbsp oil
- 2 dl beef broth
- 1 onion
- 2–3 garlic cloves
- 3–4 carrots
- 2–3 potatoes
- 2 dl lingonberries
Instructions:
1. Preheat the oven to 150°C (300°F). 2. Season the reindeer roast with salt and black pepper.
3. Heat oil in a large skillet and sear the reindeer roast on all sides until browned.
4. Transfer the roast to a baking dish and add the beef broth along with the chopped onion and garlic.
5. Peel and chop the carrots and potatoes, then add them around the roast in the dish.
6. Cover the dish with foil and bake in the oven for 2–3 hours, until the meat is tender.
7. Serve the reindeer roast with lingonberries, mashed potatoes, and root vegetables.
