This delicious apple yogurt cake is the perfect dessert or a delightful addition to your coffee table. It's moist, flavorful, and easy to prepare. Preparation Time: 1 hour
Serving Size: 8-10 servings
Ingredients:
- 2 tbsp lemon juice - 1 tsp lemon zest
- 2 dl all-purpose flour
- ½ tsp cinnamon
- 1 tsp baking powder
- 2-3 apples
- 1 tbsp sugar
- 4 dl yogurt
- 100 g butter
- 2 eggs
- 2 tsp vanilla sugar
- 1 dl lingonberry jam
- 1 additional egg
- 1 dl raisins
- 2 tbsp potato starch
Instructions:
1. Preheat the oven to 175°C (350°F). Grease a pie dish. 2. Peel and chop the apples. Mix the apple pieces with lemon juice and sugar.
3. In a bowl, cream together the butter and sugar. Add the eggs one at a time, mixing well after each addition.
4. Stir in the yogurt and vanilla sugar.
5. In a separate bowl, combine the dry ingredients: flour, cinnamon, baking powder, and potato starch. Gradually add to the wet mixture, mixing until smooth.
6. Fold in the apples and raisins gently.
7. Pour the batter into the pie dish. Spoon the lingonberry jam on top and sprinkle with lemon zest.
8. Bake in the oven for about 30-40 minutes, until the top is golden brown and the cake is cooked through.
9. Allow to cool before serving.
