A spicy and rich Thai curry that beautifully combines meat and vegetables. Perfect to serve with rice.

Ingredients:
- 500 g beef (cubed)
- 1 tbsp oil
- 1 onion (chopped)
- 3 cloves garlic (minced)
- 1 tbsp fresh ginger (grated)
- 2 tbsp Massaman curry paste
- 400 ml coconut milk
- 2 potatoes (cubed)
- 2 carrots (sliced)
- 2 tbsp peanuts (crushed)
- 2 tbsp fish sauce
- 1 tbsp sugar
- Fresh coriander (for garnish)
Instructions:
1. Heat the oil in a large pot over medium heat. Add the onion and sauté until soft.
2. Add the minced garlic and grated ginger, and cook for another minute.
3. Add the beef and cook until browned.
4. Stir in the Massaman curry paste and cook for a few more minutes.
5. Pour in the coconut milk and mix well. Add the potatoes and carrots.
6. Let the curry simmer on low heat for about 30 minutes, until the meat and vegetables are tender.
7. Stir in the crushed peanuts, fish sauce, and sugar. Mix well and let simmer for a few more minutes.
8. Serve the curry garnished with fresh coriander alongside rice.
