Ingredients:
- 1 kg lamb (e.g., shoulder or leg)
- 2 dl natural yogurt
- 4 cloves garlic, crushed
- 1 tsp cardamom
- 1 tsp cinnamon
- 1 tsp cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- Fresh coriander for garnish
Instructions:
1. In a large bowl, mix yogurt, crushed garlic, cardamom, cinnamon, cumin, salt, and black pepper.
2. Add the lamb to the marinade, ensuring it is well coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator overnight.
3. Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit).
4. Remove the lamb from the marinade and place it in a roasting pan. Drizzle olive oil over the meat.
5. Roast in the oven for about 1.5 to 2 hours, until the meat is tender and cooked through.
6. Allow the meat to rest for a few minutes before serving. Garnish with fresh coriander.
