A delightful and refreshing berry rice ice cream that combines risotto rice with delicious berries. Perfect dessert for summer days! Preparation Time: 30 minutes
Serving Size: 4-6 servings
Ingredients:
- 8 dl water - Fresh berries (strawberries and cherries)
- 250 g risotto rice
- 2-3 tablespoons oil
- 1 liter vanilla ice cream
- A pinch of salt
Instructions:
1. Sauté the risotto rice in oil over medium heat until it becomes slightly translucent.2. Gradually add water to the pan while continuously stirring. Add more water as the previous amount evaporates.
3. Continue cooking until the rice is soft but still slightly al dente. The rice does not need to be fully cooked.
4. Remove the pan from heat and let the rice cool for a moment.
5. Gently mix the cooled rice with the vanilla ice cream.
6. Fold in the fresh berries and mix lightly.
7. Scoop the ice cream mixture into bowls and serve immediately.
