Easy Mango Cheesecake

A delicious and refreshing no-bake mango cheesecake, perfect for summer parties or special occasions. Preparation Time: 30 minutes + 4 hours chilling
Serving Size: 8-10 servings
Ingredients:
- 200 g digestive biscuits - 100 g butter
- 400 g cream cheese
- 200 g sugar
- 2 dl heavy cream
- 1 dl mango puree
- 3 gelatin sheets
- 1 dl water
- 1 tbsp lemon juice
- 1 mango for decoration (optional)
Instructions:
1. Crush the digestive biscuits into fine crumbs and mix with melted butter. 2. Press the biscuit mixture firmly into the bottom of a springform pan and refrigerate to set.
3. Whip the heavy cream and set aside.
4. In a bowl, combine the cream cheese, sugar, and mango puree.
5. Soak the gelatin sheets in water for about 5 minutes, then squeeze out excess water and dissolve the gelatin in hot water.
6. Add the gelatin mixture to the cream cheese mixture and mix well.
7. Gently fold the whipped cream into the cream cheese mixture.
8. Pour the mixture over the biscuit base and smooth the top.
9. Allow the cheesecake to set in the refrigerator for at least 4 hours or overnight.
10. Decorate with fresh mango before serving.
