A zesty mandarin cake that brings a touch of spring to the heart of winter. This delightful coffee cake is the perfect sweet snack or dessert.

Ingredients:

- 3 mandarins
- 1 orange
- 200 g sugar
- 100 ml olive oil
- 3 eggs
- 250 g all-purpose flour
- 100 ml milk
- 1 dl baking powder
- 1 tsp vanilla sugar
- 1 pinch of salt

Instructions:

1. Peel the mandarins and chop them into small pieces. Squeeze the juice from the orange and zest its peel.
2. Whisk together the sugar and olive oil, then add the eggs one at a time, whisking well after each addition.
3. Stir in the orange juice, mandarin pieces, and orange zest into the batter.
4. In a separate bowl, mix the flour, baking powder, vanilla sugar, and salt. Gradually add the dry mixture to the batter, alternating with the milk.
5. Pour the batter into a loaf pan and smooth the top.
6. Bake at 175°C (350°F) for about 40-50 minutes or until the cake is golden brown and cooked through. Check for doneness with a toothpick.
7. Allow the cake to cool before serving.
