A comforting and flavorful carrot soup, perfect for chilly days, served with mango chutney.
Preparation Time: 30 minutes
Serving Size: 4

Ingredients:

- 500 g carrots
- 1 onion
- 2 garlic cloves
- 1 tbsp oil
- 1 l vegetable broth
- 1 tsp curry powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 dl cream (or plant-based alternative)
- 100 g mango chutney

Instructions:

1. Peel and chop the carrots, onion, and garlic.
2. Heat the oil in a pot and add the onion and garlic. Sauté for a few minutes until softened.
3. Add the carrots and curry powder, and mix well.
4. Pour in the vegetable broth, and add salt and black pepper. Bring to a boil, then reduce the heat and let the soup simmer for about 20 minutes, until the carrots are tender.
5. Blend the soup with an immersion blender or in a countertop blender until smooth.
6. Stir in the cream and mix well. Heat the soup again, but do not boil.
7. Serve hot with mango chutney on the side.
