Ingredients:
- 200 g dates
- 1 dl water
- 1 dl oil
- 2 eggs
- 1 dl sugar
- 2 dl pumpkin puree
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 2 dl all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 100 g feta cheese (crumbled)
Instructions:
1. Soak the dates in warm water for at least one hour.
2. Once softened, blend the dates with the soaking water and oil until smooth.
3. In a bowl, whisk the eggs, then add the date mixture and beat until fluffy.
4. Add the spices and sugar to the mixture.
5. In a separate bowl, combine the flour, baking powder, and baking soda.
6. Mix the dry ingredients into the wet ingredients and stir well.
7. Finally, fold in the crumbled feta cheese.
8. Pour the batter into muffin tins and bake at 225 °C (437 °F) for about 20-25 minutes, until the muffins are golden on top.
9. Allow to cool slightly before serving.
