A delicious gluten-free corn cake made with frozen corn, perfect for dessert. This moist and sweet cake is flavored with vanilla and cream cheese. Preparation Time: 1 hour
Serving Size: 10 servings
Ingredients:
- 330 g frozen corn
- 260 ml sweetened condensed milk
- 2 tsp baking powder
- 2 eggs
- 130 g room temperature butter
- Seeds from 1 vanilla bean (or 0.5 tsp vanilla sugar)
- 50 g cream cheese (e.g., Philadelphia)
- (100 ml masa harina - corn flour)
- For greasing: butter
- For dusting: wheat flour (for gluten-free cake, use corn flour)
- Powdered sugar for decoration
Instructions:
1. Cut the butter into pieces and place it in a bowl.
2. Split the vanilla bean and scrape the seeds into the butter.
3. Add all other ingredients to the bowl: frozen corn, sweetened condensed milk, baking powder, eggs, room temperature butter, vanilla seeds, cream cheese, and masa harina if using.
4. Blend all the ingredients with an immersion blender until you have a smooth batter.
5. Grease a springform cake pan and dust it with either wheat flour or corn flour.
6. Pour the batter into the pan and cover with foil.
7. Bake in the oven at 200°C (390°F) for about 45 minutes. You can remove the foil towards the end of baking.
8. Check if the cake is done: its edges should be brown and slightly pulling away from the pan.
9. Allow the cake to cool for a moment before serving and dust with powdered sugar.
