Ingredients

- Crumb Mixture:
- 8 dl all-purpose flour
- 3 dl sugar
- 2 tsp baking powder
- 2 tsp baking soda
- 2 tsp vanilla sugar
- 250 g melted butter (or margarine)
- Base Dough:
- About 2/3 of the crumb mixture
- 1 egg
- 2 dl buttermilk
- Filling:
- 1 liter rhubarb, chopped
- 2 cans of quark (2 x 250 g)
- 2 dl sugar
- 2 eggs
- 3 tsp vanilla sugar
- 1/3 of the crumb mixture for topping

Instructions

1. In a bowl, mix the dry ingredients. Add the melted butter and mix well. Set aside 1/3 of the crumb mixture.
2. Add the remaining crumb mixture to a bowl with the egg and buttermilk. Whisk until smooth.
3. Spread the base dough evenly on a baking sheet.
4. Distribute the chopped rhubarb over the dough. You can also use other fruits like apples, blueberries, or lingonberries.
5. In another bowl, mix the quark with sugar and eggs, and whisk until smooth.
6. Spread the quark mixture over the rhubarb.
7. Sprinkle the remaining crumb mixture on top.
8. Bake at 175°C (350°F) for about 45 minutes or until the pie is beautifully golden brown.
