A light and delicious apple pie that's easy to make and enjoyed by the whole family.
Preparation Time: 1 hour
Serving Size: 8 servings
Ingredients:
- 2 tsp baking powder
- 1.5 dl potato flour
- 2 tsp cinnamon
- 2 dl all-purpose flour
- Liquid margarine
- 5 apples
- 2 tbsp brown sugar
- 1 dl low-fat buttermilk
- 1 dl sugar
- 2 eggs
Instructions:
1. In a bowl, beat the eggs and sugar until the mixture is light and fluffy.
2. In a separate bowl, mix the dry ingredients: baking powder, potato flour, cinnamon, and all-purpose flour.
3. Gradually add the dry ingredients to the egg mixture and stir until smooth.
4. Alternate adding the liquid margarine and low-fat buttermilk to the batter, mixing well.
5. Peel and slice the apples, then toss the slices with brown sugar.
6. Pour the batter into a greased pie dish and arrange the apple slices on top.
7. Bake at 180°C (350°F) for about 30-40 minutes, or until the pie is cooked through and golden brown.
