Ingredients
- Macaron Shells:- 110 g almond flour
- 200 g powdered sugar
- 100 g egg whites (about 3 eggs)
- 30 g granulated sugar
- Orange food coloring
- Orange Chocolate Ganache:
- 150 ml cream
- Zest of 1 orange
- Juice of 1 orange
- 250 g milk chocolate
Instructions
1. Prepare the Macaron Shells:- Combine almond flour and powdered sugar in a bowl and sift them together.
- In another bowl, whip the egg whites until frothy. Gradually add granulated sugar and continue whipping until stiff peaks form.
- Add orange food coloring to the meringue until the desired hue is achieved.
- Gently fold the almond flour-sugar mixture into the meringue until the batter is smooth.
- Pipe small circles of the batter onto a parchment-lined baking sheet. Let them dry for about 30-60 minutes.
- Bake at 150°C (300°F) for about 12-15 minutes. Allow to cool.
2. Prepare the Orange Chocolate Ganache:
- Zest the orange and place the zest in a saucepan with the cream. Bring to a boil and simmer the mixture for about 10 minutes.
- Bring it to a boil again and pour the hot mixture over the chopped chocolate through a sieve. Stir until smooth.
- Add the squeezed orange juice and mix again. Allow to cool at room temperature overnight.
3. Assemble the Macarons:
- Take one macaron shell and place a bit of orange chocolate ganache on top. Cover with another shell and gently press together.
- You can decorate the macarons with edible eyes or other decorations.
