Ingredients:
- 2 dl mämmi (Finnish rye pudding)
- 2 dl sugar
- 1 dl milk
- 1 dl oil
- 2 eggs
- 4 dl all-purpose flour
- 2 tsp baking powder
- 1 tsp vanilla sugar
- 0.5 tsp salt
- Chocolate chips or nuts (optional)
Instructions:
1. Preheat the oven to 175°C (350°F) and line a muffin tray with muffin liners.
2. In a bowl, mix mämmi, sugar, milk, oil, and eggs. Whisk until well combined.
3. Add flour, baking powder, vanilla sugar, and salt. Stir until just combined; do not overmix.
4. If desired, fold in chocolate chips or nuts into the batter.
5. Divide the batter evenly among the muffin liners, filling each about 2/3 full.
6. Bake in the oven for about 20-25 minutes, until the muffins are golden brown and a toothpick inserted comes out clean.
7. Allow the muffins to cool before serving.
