A flavorful and warm pasta dish, perfect for chilly evenings.

Ingredients:

- 250 g pasta (e.g., penne or fusilli)
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 200 g fresh mushrooms, sliced
- 200 g cherry tomatoes, halved
- 100 g fresh spinach
- 1 tsp dried oregano
- Salt and black pepper to taste
- 50 g grated Parmesan cheese

Instructions:

1. Cook the pasta according to the package instructions in salted water until al dente. Drain and reserve some pasta water.
2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté until softened.
3. Add the crushed garlic and diced bell pepper, and cook for a few minutes.
4. Add the sliced mushrooms and continue to sauté until they are tender.
5. Stir in the halved cherry tomatoes and fresh spinach, cooking until the spinach wilts.
6. Mix in the cooked pasta and oregano. Add reserved pasta water as needed to keep the mixture moist.
7. Season with salt and black pepper. Serve topped with grated Parmesan cheese.
