- 2 garlic cloves

- 1 potato
- 400 ml chicken or vegetable broth
- 200 ml coconut milk
- 1 tbsp curry powder
- Salt and pepper to taste
- Fresh herbs (e.g., parsley) for garnish
- Oil for frying

Instructions:

1. Peel and chop the onion, garlic, carrots, and potato.
2. Heat oil in a pot over medium heat. Add onion and garlic, sauté until soft.
3. Add chicken breast fillets and cook until golden brown.
4. Add carrots and potato, stirring well.
5. Pour in the chicken or vegetable broth and coconut milk. Add curry powder, salt, and pepper.
6. Allow the stew to simmer on low heat for about 15 minutes until the vegetables are tender.
