A refreshing and delicious salmon burger that combines Scandinavian flavors. Perfect to serve with wine.
Preparation time: 30 minutes
Serving size: 10 servings
Ingredients:
- 1 rustic bread / malt bread / Maalahden bread
- Butter for frying
Salmon Patties:
- 500 g skinless, boneless salmon fillet
- 1 dl cream
- 2 egg whites
- Fresh dill
- Pepper
- Salt
- Butter for frying
Pickled Cucumbers:
- 1/2 cucumber
- 0.5 tbsp sugar
- 1 capful of vinegar
- 0.5 tsp salt
- Dill sprigs
Lemon Mayonnaise:
- 1 dl rapeseed oil
- 1 egg yolk
- 1 tsp Dijon mustard
- 1 tsp honey
- Grated lemon zest
- 1 tbsp lemon juice
- A pinch of salt
- (Water)
Instructions:
1. Prepare the Salmon Patties: Cut the salmon into small cubes. Mix all ingredients and blend with an immersion blender or food processor. Shape the mixture into patties directly on a frying pan. Cook in butter over medium heat for about 5 minutes, flipping until the patties are cooked through.
2. Prepare the Pickled Cucumbers: Peel the cucumber and slice it. Place all ingredients in a container and shake vigorously. Let it marinate in the refrigerator for a while.
3. Make the Mayonnaise: In a tall container, combine oil, egg yolk, mustard, lemon juice, grated lemon zest, honey, and salt. Slowly add the oil drop by drop while whisking continuously. Gradually add the remaining oil. If the mayonnaise is too thick, add a little water.
4. Assemble the Burger: Cut out round pieces from the malt bread using a wine glass. Fry the slices in butter on a pan. Assemble the burger with the patties, pickled cucumbers, and lemon mayonnaise. Serve chilled with wine.
