A flavorful and juicy roasted chicken infused with lemon and garlic, perfect for a family dinner.
Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 4 cloves of garlic, minced
- 2 lemons, zested and juiced
- 1/4 cup olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Fresh parsley for garnish (optional)
Instructions:
1. Preheat your oven to 425°F (220°C).
2. In a small bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, salt, pepper, thyme, and rosemary.
3. Pat the chicken dry with paper towels and place it in a roasting pan.
4. Rub the garlic and lemon mixture all over the chicken, making sure to get it under the skin and inside the cavity.
5. Squeeze the juice of one lemon half inside the cavity and place the other half inside the chicken.
6. Roast the chicken in the preheated oven for about 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
7. Let the chicken rest for about 10 minutes before carving. Garnish with fresh parsley if desired.
