Ingredients:

- 4 slices of whole grain bread
- 2 avocados
- 2 eggs
- 1 tomato
- Salt and pepper to taste
- Fresh basil or arugula for garnish
- Olive oil

Instructions:

1. Toast the whole grain bread slices until golden brown.
2. Boil the eggs to your desired doneness (around 6-8 minutes).
3. Meanwhile, halve and peel the avocados. Mash the avocados in a bowl and season with salt and pepper.
4. Slice the tomato.
5. Spread the mashed avocado on top of the toasted bread.
6. Peel the boiled eggs and slice them. Place the egg slices on top of the avocado.
7. Add the tomato slices and garnish with fresh basil or arugula.
8. Drizzle a little olive oil on top and enjoy!
