Ingredients:
- 300 g pasta (e.g., spaghetti or penne)
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 onion, chopped
- 1 bell pepper, sliced
- 200 g cherry tomatoes, halved
- 100 g fresh spinach
- 100 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve a little pasta water.
2. Heat the olive oil in a large skillet over medium heat. Add the garlic and onion, and sauté for about 2-3 minutes.
3. Add the bell pepper and cherry tomatoes to the skillet. Cook until the vegetables soften, about 5-7 minutes.
4. Stir in the spinach and mix until it wilts. Season with salt and pepper.
5. Combine the cooked pasta with the vegetable mixture. Add reserved pasta water as needed to keep it from being too dry.
6. Mix in the grated Parmesan cheese and allow it to melt into the pasta.
7. Serve immediately topped with fresh basil.
