Ingredients:
- 2 tablespoons olive oil - 1 onion, finely chopped
- 2 garlic cloves, crushed
- 2 carrots, diced
- 1 celery stalk, diced
- 1 potato, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 liter vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh parsley for garnish
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and crushed garlic, and sauté for about 3-4 minutes until soft. 2. Add the carrots, celery, and potato. Cook for another 5 minutes, stirring occasionally.
3. Add the zucchini and bell pepper. Continue cooking for another 3 minutes.
4. Pour in the vegetable broth and add thyme, salt, and black pepper. Bring to a boil.
5. Reduce the heat and let the soup simmer for about 15-20 minutes, until all the vegetables are tender.
6. Serve hot, garnished with fresh parsley.
