A delicious pasta dish that combines the flavors of autumn, bringing warmth and comfort to cold days. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., tagliatelle or penne) - 200 g cubed pumpkin
- 150 g sliced mushrooms (e.g., button mushrooms or chanterelles)
- 1 onion, chopped
- 2 garlic cloves, crushed
- 100 ml vegetable broth
- 100 ml cream
- 50 g grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve some pasta water. 2. Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté for about 3-4 minutes.
3. Add mushrooms and pumpkin cubes to the skillet. Cook until the pumpkin is tender and the mushrooms are browned, about 5-7 minutes.
4. Pour the vegetable broth and cream into the skillet. Stir well and let it simmer over low heat for about 5 minutes.
5. Add the drained pasta to the skillet and mix all the ingredients together. If the mixture is too dry, add a bit of the reserved pasta water.
6. Season with salt and pepper. Stir in the grated Parmesan cheese.
7. Serve the pasta garnished with fresh thyme.
