Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or fusilli) - 200 g sliced mushrooms
- 1 onion, chopped
- 2 garlic cloves, crushed
- 200 ml cream
- 100 g grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and save some cooking water. 2. Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until soft.
3. Add the sliced mushrooms and crushed garlic to the skillet. Cook until the mushrooms are tender and the liquid has evaporated.
4. Pour the cream into the skillet and stir. Allow it to simmer on low heat for a few minutes.
5. Add the cooked pasta to the skillet. Mix well, adding a bit of reserved pasta water if needed for a creamy consistency.
6. Stir in the grated Parmesan cheese and thyme. Season with salt and pepper to taste. Mix thoroughly.
7. Serve the pasta garnished with fresh parsley.
