Pumpkin Soup

A rich and spiced pumpkin soup that brings the flavors of autumn. Easy to make and full of delicious tastes! Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1/4 of a 2½ kg pumpkin (about 600 g of pumpkin flesh) - 1 onion
- 2 garlic cloves
- 200 ml coconut cream
- ½ tsp turmeric
- ½ tsp garam masala
- ½ tsp coriander
- A dash of chili or cayenne pepper
- Black pepper to taste
- Salt to taste
- 1 tbsp coconut oil
- Dried pumpkin seeds for garnish
Instructions:
1. Cut the pumpkin into pieces and chop the onion. 2. Melt the coconut oil in a pot and sauté the onions for a few minutes.
3. Add turmeric, garam masala, and coriander to the pot, stirring with the onions. Be careful not to burn the spices.
4. Add the pumpkin pieces and sauté for a little longer.
5. Pour in enough water to cover the vegetables halfway. Simmer until the vegetables are tender.
6. Blend the soup until smooth, then add the coconut cream and remaining spices. Mix well.
7. Serve the soup in bowls and sprinkle dried pumpkin seeds on top.
