A refreshing and delicious soup, perfect as an appetizer or part of a light meal. Preparation Time: 20 minutes
Serving Size: 4-6 servings
Ingredients:
- 1 cup water - 1 chicken broth cube
- 1 ½ cups plain yogurt
- ¾ cup sour cream
- ¾ cup crème fraîche
- 1-2 cucumbers
- (optional: chives for garnish)
Instructions:
1. Bring the water to a boil in a pot and add the chicken broth cube. Stir until fully dissolved. 2. Allow the broth to cool slightly, then transfer it to a blender.
3. Add the yogurt, sour cream, and crème fraîche to the blender. Blend until smooth.
4. Peel and chop the cucumbers. Add them to the blender and blend again until completely pureed.
5. Taste and season with salt and pepper if needed.
6. Serve the soup chilled, garnished with fresh chives if desired.
