A vibrant and fresh salad perfect for spring gatherings, featuring tender potatoes, green beans, and a tangy feta dressing.

Serving Size: 4-6 people

Ingredients:

- 1 kg potatoes
- 200 g green beans
- 150 g cherry tomatoes
- 1 red onion
- 100 g feta cheese
- 4 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
- Fresh basil for garnish

Instructions:

1. Peel and boil the potatoes in salted water for about 15-20 minutes until tender. Drain and let cool.
2. Blanch the green beans in boiling water for about 3-4 minutes until bright green. Drain and cool.
3. Slice the red onion into thin rings and cut the cherry tomatoes in half.
4. In a large bowl, combine the cooled potatoes, green beans, red onion, and cherry tomatoes.
5. Prepare the dressing by mixing olive oil and balsamic vinegar. Season with salt and pepper.
6. Pour the dressing over the salad and gently toss to combine.
7. Crumble feta cheese over the salad and garnish with fresh basil.
8. Serve immediately or allow to marinate in the refrigerator before serving.
