Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2 carrots, diced
- 2 potatoes, diced
- 1 celery stalk, chopped
- 1 zucchini, diced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 liter vegetable broth
- 400 grams canned tomatoes
- 1 cup green beans, chopped
- Fresh parsley for garnish
Instructions:
1. Heat olive oil in a large pot over medium heat. Add chopped onion and crushed garlic. Sauté for about 3 minutes until softened.
2. Add carrots, potatoes, and celery. Cook for an additional 5 minutes.
3. Stir in zucchini, thyme, salt, and pepper. Mix well.
4. Pour in vegetable broth and canned tomatoes. Bring to a boil.
5. Reduce heat and let the soup simmer for about 15 minutes, or until the vegetables are tender.
6. Add green beans and simmer for another 5 minutes.
7. Serve hot, garnished with fresh parsley.
