A delicious pasta dish that adds variety to your weekday meals and takes you on a flavorful journey! Preparation time: 30 minutes. Serving size: 4.Ingredients:
- 300 g pasta (e.g., penne or fusilli)- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 150 g spinach
- 100 ml cream
- 50 g Parmesan cheese, grated
- Salt and pepper to taste
- Fresh herbs (e.g., basil or parsley) for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a bit of the cooking water.2. Heat olive oil in a large skillet. Add onion and garlic, sauté for a few minutes.
3. Add bell pepper and cherry tomatoes, cook for about 5 minutes until the tomatoes soften.
4. Stir in the spinach and mix until wilted.
5. Pour the cream into the skillet and mix well. Add the cooked pasta and stir. If the mixture is too dry, add a little reserved cooking water.
6. Season with salt and pepper. Add grated Parmesan cheese and stir until melted.
7. Serve the dishes warm, garnished with fresh herbs.
