Delicious leek patties that are the perfect addition to your meal. They are easy to prepare and can be served as a main dish or a side. Preparation Time: 45 minutes
Serving Size: 4-6 patties
Ingredients:
- 3-4 leek stalks - 1.2 dl breadcrumbs (or matzo meal)
- 1 egg
- Salt and pepper to taste
- A generous handful of fresh parsley
- 1 crushed garlic clove
- Oil for frying or baking
Instructions:
1. Clean the leek stalks and chop the white and light green parts into pieces. 2. Sauté the leeks in a small amount of olive oil over low heat with a lid on for about 30 minutes until soft.
3. Allow the leeks to cool slightly and transfer them to a food processor. Add the egg, breadcrumbs, parsley, salt, and pepper.
4. Blend until the mixture is smooth. Shape small patties by hand.
5. Fry the patties in oil in a pan or bake them. If using the oven, brush oil on parchment paper and on top of the patties. Bake at 225°C (437°F) for about 20 minutes, flip the patties, and bake for an additional 15 minutes or until they are golden brown.
