Instructions
1. Prepare the rye dough by mixing the rye flour and water until you have a thick paste. 2. Completely cover the ham with a 2 cm layer of the dough using damp hands, ensuring the dough seals tightly.
3. Remove the rind and excess fat from the cooked ham as soon as it is hot.
4. Brush the surface of the ham with a mixture of brown sugar and mustard.
5. Coat the surface of the ham with breadcrumbs.
6. Brown the ham in the oven at 250-275 °C until the surface is beautifully golden brown.
