Ingredients:
- 400 g rhubarb (cleaned and chopped)
- 200 g sugar
- 150 g butter (softened)
- 200 g all-purpose flour
- 2 tsp baking powder
- 2 eggs
- 100 ml milk
- 1 tsp vanilla sugar
- A pinch of salt
Instructions:
1. Preheat the oven to 180°C (350°F).
2. Grease a pie dish.
3. In a bowl, mix the softened butter and sugar until the mixture is light and fluffy.
4. Add the eggs one at a time, mixing well after each addition.
5. In another bowl, combine the flour, baking powder, vanilla sugar, and salt.
6. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until smooth.
7. Pour the batter into the pie dish and spread it evenly.
8. Arrange the chopped rhubarb on top of the batter.
9. Bake in the oven for about 35-40 minutes or until the top is golden brown and the pie is cooked through.
10. Allow to cool before serving.
