A creamy and hearty Finnish mushroom soup made with deliciously foraged korvasieni (false morel) mushrooms. Preparation time: 30 minutes
Serving size: 4 servings
Ingredients:
- 200 g korvasieniä (false morel mushrooms)
- 1 onion
- 2 potatoes
- 1 l vegetable broth
- 2 dl cream
- 2 tbsp butter
- Salt to taste
- Black pepper to taste
- Fresh nettles (optional)
Instructions:
1. Peel and chop the onion and potatoes.
2. Clean the korvasienet thoroughly and chop them into smaller pieces.
3. Heat the butter in a pot and sauté the onion until it becomes soft.
4. Add the chopped potatoes and korvasienet to the pot and sauté for a moment.
5. Pour the vegetable broth into the pot and bring to a boil. Let it simmer for about 15-20 minutes until the potatoes are tender.
6. Stir in the cream and mix well. Season with salt and black pepper.
7. If desired, add fresh nettles to the soup before serving.
8. Blend the soup if you prefer a smoother texture, or serve it as is. Serve warm.
