A delicious yellow pasta that is perfect for spring, adding color and flavor to your plate. Preparation time is just 30 minutes, and it serves four.Ingredients:
- 300 g pasta (e.g., spaghetti)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced (yellow or red)
- 200 g cherry tomatoes, halved
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried basil
- 50 g Parmesan cheese, grated
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and reserve a bit of the cooking water.
2. Heat olive oil in a large skillet over medium heat. Add the onion and sauté for about 3-4 minutes until softened.
3. Add the crushed garlic and bell pepper. Sauté for another 5 minutes until the pepper is tender.
4. Add the cherry tomatoes, salt, black pepper, and dried basil. Cook for another 5-7 minutes until the tomatoes are soft.
5. Stir in the cooked pasta with the vegetables. Add a bit of the reserved cooking water if needed to keep the pasta from drying out. Mix well.
6. Add the grated Parmesan cheese and stir until the cheese is melted.
7. Serve with fresh basil on top.
