A delicious chocolate mousse cake perfect for celebrations, featuring a rich chocolate base, peach & passion fruit-flavored mousse, and juicy peach pieces. Preparation Time: 2 hours (plus 4 hours chilling time)

Ingredients
- Chocolate Base: - 200 g dark chocolate
- 150 g butter
- 150 g sugar
- 3 eggs
- 100 g all-purpose flour
- 1 tsp baking powder
- Chocolate Mousse:
- 300 g peach & passion fruit-flavored chocolate chips
- 3 dl heavy cream
- 2 tbsp sugar
- 3 gelatin sheets
- 1 dl peach syrup
- For Filling:
- 1 can of peach slices (approx. 400 g)
- Fresh peaches and chocolate shavings for decoration
Instructions
1. Prepare the Chocolate Base: - Melt the dark chocolate and butter together in a saucepan over low heat.
- In a bowl, whisk together the sugar and eggs until frothy. Add the melted chocolate-butter mixture.
- Combine the flour and baking powder, then fold into the batter until well mixed.
- Pour the batter into a greased springform pan and bake at 180°C for about 25-30 minutes. Allow to cool.
2. Make the Chocolate Mousse:
- Soak the gelatin sheets in cold water for about 5 minutes.
- Heat the peach syrup in a saucepan and add the gelatin sheets, stirring until dissolved.
- Whip the heavy cream and sugar until soft peaks form. Gently fold in the chocolate chips.
- Carefully add the gelatin-peach mixture to the mousse and fold until combined.
3. Assemble the Cake:
- Slice the cooled chocolate base in half. Place the first layer on a serving platter.
- Spread the mousse over the first layer and top with peach slices.
- Place the second layer on top and cover it with the remaining mousse.
- Let the cake chill in the refrigerator for at least 4 hours or overnight.
4. Decorate:
- Before serving, garnish with fresh peach slices and chocolate shavings.
