Serving Size: 4 servings
Ingredients:
- 150 g mixed greens (e.g., romaine, arugula) - 100 g cherry tomatoes
- 1 cucumber
- 100 g peas (fresh or frozen)
- 1 avocado
- 50 g feta cheese
- 30 g nuts (e.g., walnuts or cashews)
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse and dry the mixed greens, then place them in a large bowl. 2. Halve the cherry tomatoes and slice the cucumber. Add them to the greens.
3. Blanch the peas in boiling water for 1-2 minutes, rinse with cold water, and add to the salad.
4. Dice the avocado and incorporate it into the salad.
5. Crumble feta cheese over the salad and sprinkle the nuts on top.
6. Make the dressing by mixing olive oil, balsamic vinegar, salt, and pepper. Drizzle it over the salad and toss gently.
7. Serve immediately and enjoy the fresh flavors of spring!
