A delicious and creamy cheesecake without the need for baking, perfect for any occasion.
Preparation Time: 20 minutes + 4 hours chilling
Serving Size: 8 servings
Ingredients
- BASE:
- 200 g digestive biscuits
- 50 g butter
- FILLING:
- 3 eggs
- 300 g powdered sugar
- 200 ml whipped vanilla cream
- 100 g cream cheese
Instructions
1. Crush the digestive biscuits into fine crumbs and melt the butter.
2. Mix the biscuit crumbs and melted butter together.
3. Press the mixture firmly into the bottom of a springform pan to form the base.
4. Whisk the eggs and powdered sugar together until frothy.
5. Add the whipped vanilla cream and cream cheese to the egg mixture, and mix well.
6. Pour the filling evenly over the biscuit base.
7. Allow the cheesecake to set in the refrigerator for at least 4 hours or overnight.
8. Optionally, decorate before serving.
9. Cut into slices and enjoy!
