This delightful summer menu features refreshing Aperol Spritz, delicious fish dishes, hearty ribs, fresh salads, and a sweet rhubarb pie, perfect for a cozy gathering at the cottage.
Ingredients:
- Aperol Spritz:
- 2 parts Aperol
- 3 parts sparkling wine
- 1 part soda water
- Ice cubes
- Orange slices for garnish

- Perch fillets

Instructions:
1. Prepare the Aperol Spritz by mixing Aperol, sparkling wine, and soda water in a glass with ice cubes. Garnish with orange slices.
2. For the perch tartare, mix chopped perch, sour cream, lemon juice, salt, and pepper. Spoon the mixture onto toasted bread or rye crisps.
3. Season the salmon with birch snap, salt, and pepper. Cook on a grill or over an open fire on a plank.
4. Boil the ribs in water, marinate them, and then grill until they are beautifully browned.
5. Boil the new potatoes and let them cool. Add sliced red onion, arugula, and olive oil dressing.
6. For the green salad, mix sliced fennel, arugula, and radishes.
7. Stuff the mushrooms with cream cheese and blue cheese, wrap them in bacon, and grill until cooked.
8. Prepare the rhubarb pie by filling the pie crust with rhubarb, sugar, and other ingredients. Bake in the oven until golden brown.
