A refreshing and delicious strawberry cheesecake, perfect for summer celebrations. This cake combines sweet strawberries, white chocolate, and lime for an unforgettable flavor.Preparation Time: 30 min + chilling time
Serving Size: 8-10 servings
Ingredients:
- 120 g chocolate cookies- 50 g melted butter
- 400 g fresh strawberries
- 100 g white chocolate
- 200 ml cream
- 200 g plain cream cheese
- 75 ml lime juice
- 5 gelatin sheets
Instructions:
1. Melt the butter and crush the chocolate cookies. Mix them together and press the mixture evenly into the bottom of a 20 cm cake pan. Place the pan in the refrigerator.2. Puree the fresh strawberries using a hand blender.
3. Soak the gelatin sheets in cold water.
4. In a bowl, whisk together the cream cheese, melted and cooled white chocolate, strawberry puree, and half of the lime juice.
5. In a separate bowl, whip the cream until stiff peaks form.
6. In a saucepan, heat the remaining lime juice until nearly boiling. Squeeze excess water from the gelatin sheets and add them to the hot lime juice. Stir until the gelatin is dissolved.
7. Gradually whisk the gelatin mixture into the cream cheese mixture. Gently fold in the whipped cream.
8. Pour the filling over the cookie crust and gently tap the pan on the counter to remove any air bubbles.
9. Allow the cheesecake to set in the refrigerator overnight.
10. Carefully release the cheesecake from the pan using a knife. Decorate with fresh strawberries, mint leaves, meringue crumbs, and edible flowers.
