Ingredients:
- 1 dl liquid margarine
- 2 tbsp gingerbread spice or 2 eggs
- 1 tsp baking powder
- 2 dl chopped dates, figs, or raisins
- 1.5 dl brown sugar
- 1 tsp ginger
- 2 tsp baking soda
- 1 tsp cardamom
- 1 tsp cinnamon
- 3 dl buttermilk
- 1 dl dark syrup
- 5 dl all-purpose flour
- For decoration: powdered sugar, candied orange peel, cloves
Instructions:
1. Preheat the oven to 175°C (350°F).
2. Grease and flour a ring cake pan.
3. In a bowl, mix the liquid margarine, brown sugar, buttermilk, and dark syrup.
4. Add the eggs (or gingerbread spice) and mix well.
5. In a separate bowl, combine the dry ingredients: flour, baking powder, baking soda, ginger, cardamom, cinnamon, and gingerbread spice.
6. Combine the dry ingredients with the wet mixture and stir until well blended.
7. Gently fold in the chopped dates, figs, or raisins.
8. Pour the batter into the prepared pan and smooth the top.
9. Bake in the oven for about 45-60 minutes or until the cake is cooked through.
10. Allow the cake to cool before decorating with powdered sugar, candied orange peel, and cloves.
