Ingredients:

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2 carrots, sliced
- 1 zucchini, diced
- 1 bell pepper, diced
- 200 g mushrooms, sliced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 400 g can crushed tomatoes
- 2 dl vegetable broth
- Salt and pepper to taste
- Fresh basil for garnish

Instructions:

1. Heat olive oil in a large skillet over medium heat. Add chopped onion and crushed garlic, sauté until soft.
2. Add sliced carrots and cook for about 5 minutes until they begin to soften.
3. Stir in zucchini, bell pepper, and mushrooms. Continue cooking for another 5-7 minutes.
4. Add thyme, rosemary, crushed tomatoes, and vegetable broth. Mix well.
5. Let the stew simmer on low heat for about 20 minutes until the vegetables are tender. Season with salt and pepper.
6. Serve with fresh basil on top.
