Tapaskakku is a delicious and visually appealing savory cake that combines various flavors and textures. It's perfect for serving on festive occasions or at friends' gatherings.
Ingredients:
- 200 g feta cheese - 100 g cherry tomatoes
- 100 g black olives
- 1 dl fresh herbs (e.g., basil and thyme)
- 3 eggs
- 2 dl all-purpose flour
- 1 dl milk
- 1 dl oil
- 1 tsp baking powder
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 180°C (350°F). 2. Crumble the feta cheese into a bowl and add halved cherry tomatoes and sliced black olives.
3. Add the chopped fresh herbs and mix well.
4. In another bowl, whisk together the eggs, milk, oil, salt, and pepper.
5. In a separate bowl, combine the flour and baking powder, then add it to the egg-milk mixture.
6. Fold the batter into the cheese and vegetable mixture until well combined.
7. Pour the batter into a greased cake pan and bake in the oven for about 30-40 minutes, or until the cake is golden brown and cooked through.
8. Allow the cake to cool before serving.
