Description: A traditional Finnish Christmas drink, Sahti, that can be easily made at home. This recipe brings the festive atmosphere and flavors to your gatherings.
Preparation Time: 1 week (including fermentation)
Serving Size: Approximately 10 liters

Ingredients:

- 5 kg barley malt
- 1 kg rye flakes
- 300 g sugar
- 15 liters water
- 50 g hops
- 1 packet Sahti yeast
- 1 cinnamon stick (optional)
- 5-10 sprigs of spruce (optional)

Instructions:

1. Soak the barley malt and rye flakes in water overnight.
2. Boil the soaked ingredients in a large pot for about 1-2 hours.
3. Add the hops during the boiling process and continue boiling for another 30 minutes.
4. Strain the liquid and let it cool.
5. Add the sugar and cinnamon stick; stir well.
6. Incorporate the Sahti yeast and mix again.
7. Pour the mixture into a clean fermentation vessel and seal it airtight.
8. Allow it to ferment in a cool place for about a week, until fermentation is complete.
9. Bottle the Sahti and let it mature in a cool place for a few more days before serving.
